Instructions
- Preheat oven to 350°F. Prepare your brownie pan with non-stick spray.
- In a bowl, whisk together flour, cocoa powder, baking powder, salt, and espresso powder.
- In a mixer bowl, cream together shortening and sugar until fluffy. Beat in eggs one at a time.
- Gradually mix in the dry ingredients then fold in mini chocolate chips.
- Assemble: Place batter in the pan, press sandwich cookie into the center of each portion, and cover with more batter.
- Bake for 12-15 minutes for individual cups or 20-25 minutes for a full pan until tops are firm.
- Cool completely before cutting and serving.
