Instructions
- Preheat air fryer to 400°F (200°C).
- Slice zucchinis into thin rounds and sprinkle with salt; let sit for 15 minutes. Pat dry.
- Mix beef rind crumbs, parmesan, pepper, paprika, and garlic powder in a bowl.
- Whisk eggs and water in another bowl.
- Dip zucchini slices in egg mixture, then coat in the crumb mixture.
- Place coated slices in the air fryer basket in a single layer and cook for 5 minutes. Flip and cook for an additional 3 minutes until golden brown.
