Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream the butter (or coconut oil) until fluffy. Gradually add the sugar and mix well.
  4. Beat in the eggs one at a time followed by almond extract.
  5. Slowly combine dry ingredients into the wet mixture until just blended. Fold in chopped almonds.
  6. Drop tablespoon-sized scoops of dough onto prepared sheets about two inches apart.
  7. Bake for 12-15 minutes until edges are golden brown. Let cool slightly before transferring.
