- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened (or coconut oil)
- 2 large eggs
- 2 tsp almond extract
- 1/2 cup chopped almonds
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, cream the butter (or coconut oil) until fluffy. Gradually add the sugar and mix well.
- Beat in the eggs one at a time followed by almond extract.
- Slowly combine dry ingredients into the wet mixture until just blended. Fold in chopped almonds.
- Drop tablespoon-sized scoops of dough onto prepared sheets about two inches apart.
- Bake for 12-15 minutes until edges are golden brown. Let cool slightly before transferring.
