- 4 salmon fillets (1½ pounds)

Instructions
- In a medium bowl, mix peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, black pepper, and red pepper flakes.
- Reserve half of the marinade in the refrigerator. Marinate the salmon fillets in the remaining marinade for at least 30 minutes.
- Preheat your oven to 375°F.
- In an oven-safe skillet over medium-high heat, sear the salmon skin-side up for 2-3 minutes until golden brown.
- Flip the salmon and add sliced peaches; cook for another 2-3 minutes until slightly softened.
- Pour reserved marinade over salmon and peaches; transfer to the oven.
- Bake for 12-15 minutes or until salmon reaches an internal temperature of 145°F.
