- 2 pounds boneless skinless chicken breasts
- 1 tablespoon avocado oil
- 2 tablespoons unsalted butter
- 1 clove garlic (minced)
- 1 teaspoon smoked paprika
- 1 teaspoon regular paprika
- 1 teaspoon salt
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¾ teaspoon cayenne pepper
- ½ teaspoon fresh cracked black pepper
- ¼ teaspoon dried oregano
- ¼ teaspoon dried thyme
- ¼ teaspoon dried basil
Instructions
- Preheat the oven to 350°F (175°C) and heat a cast iron skillet over medium-high heat.
- Pat chicken breasts dry with paper towels.
- In a bowl, mix all blackening seasonings together and coat each chicken breast evenly.
- Add avocado oil to the hot skillet. Sear the chicken breasts for about 5 minutes until a blackened crust forms.
- Flip the chicken and transfer the skillet to the oven until the internal temperature reaches 160°F (71°C), about 10-15 minutes.
- Remove from oven and add butter and minced garlic to the skillet; stir for about 1 minute until fragrant.
- Let the chicken rest for 5-10 minutes before slicing and serving.
