  • ½ cup shredded mozzarella cheese
  • ⅓ cup finely shredded Parmesan cheese
  • 1 large egg
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • Additional 1 cup shredded mozzarella for topping

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
  3. Grate the zucchini using a cheese grater and remove excess moisture by squeezing it in a kitchen towel.
  4. In a mixing bowl, combine the drained zucchini, mozzarella cheese, Parmesan cheese, egg, Italian seasoning, salt, and garlic powder. Mix until well blended.
  5. Spread the mixture evenly on the prepared baking sheet into about a half-inch thick layer.
  6. Bake for 15 minutes, then add an additional cup of mozzarella on top and bake for another 5 minutes until bubbly.
