- 4 cups grated zucchini (about 2 large zucchini)
- ½ cup shredded mozzarella cheese
- ⅓ cup finely shredded Parmesan cheese
- 1 large egg
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt
- ½ teaspoon garlic powder
- Additional 1 cup shredded mozzarella for topping
Instructions
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- Grate the zucchini using a cheese grater and remove excess moisture by squeezing it in a kitchen towel.
- In a mixing bowl, combine the drained zucchini, mozzarella cheese, Parmesan cheese, egg, Italian seasoning, salt, and garlic powder. Mix until well blended.
- Spread the mixture evenly on the prepared baking sheet into about a half-inch thick layer.
- Bake for 15 minutes, then add an additional cup of mozzarella on top and bake for another 5 minutes until bubbly.
- Allow to cool slightly before cutting into sticks.
