  • 22.5 lbs deboned skin-on chicken thighs
  • 1/2 cup fresh lime juice
  • 1 teaspoon fresh lime zest
  • 1/4 cup olive oil
  • 3 tablespoons fresh cilantro (chopped)
  • 1 jalapeño (finely chopped)
  • 2 teaspoons chipotle chili powder
  • 5 cloves garlic (minced)
  • 1 1/2 tablespoons honey
  • Salt to taste

Instructions

  1. Prepare the chicken by deboning and rinsing it under cold water. Pat dry with paper towels.
