Ingredients
- 2–2.5 lbs deboned skin-on chicken thighs
- 1/2 cup fresh lime juice
- 1 teaspoon fresh lime zest
- 1/4 cup olive oil
- 3 tablespoons fresh cilantro (chopped)
- 1 jalapeño (finely chopped)
- 2 teaspoons chipotle chili powder
- 5 cloves garlic (minced)
- 1 1/2 tablespoons honey
- Salt to taste
Instructions
- Prepare the chicken by deboning and rinsing it under cold water. Pat dry with paper towels.
- In a mixing bowl, whisk together lime juice, lime zest, olive oil, cilantro, jalapeño, chipotle chili powder, garlic, honey, and salt.
- Add chicken to the marinade and coat evenly. Allow to marinate for at least 2 hours or preferably overnight.
- Preheat the grill to medium-high heat. Grill the chicken until golden brown and charred on both sides.
- Serve hot with fresh lime wedges for squeezing.
