- 2 tbsp fresh parsley (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- In a large bowl, combine ground beef or turkey, onion powder, garlic powder, Italian seasoning, salt, and pepper. Mix gently and form into small meatballs (about one inch in diameter).
- Brown the meatballs in a skillet over medium-high heat until golden but not fully cooked.
- Spread mashed potatoes evenly in the baking dish. Layer browned meatballs on top.
- Pour chicken broth over the layers to keep them moist.
- Sprinkle shredded cheese over the casserole. Cover with foil and bake for 25-30 minutes. Remove foil and bake for an additional 10 minutes until bubbly and golden.
- Garnish with fresh parsley before serving.
