- 1 large head of cauliflower
- 2 cups cooked chicken breast
- 1 cup buffalo sauce
- ½ cup ranch dressing
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 3 green onions
Instructions
- Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish.
- Steam or blanch the cauliflower florets until just tender (about 5-7 minutes), then drain and pat dry.
- In a mixing bowl, combine shredded chicken with buffalo sauce and ranch dressing. Add cauliflower and season with salt and pepper.
- Transfer the mixture to the prepared baking dish and top with cheddar and mozzarella cheeses.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Let cool slightly before garnishing with chopped green onions.
