- 4 cups fresh broccoli florets
- 1 cup shredded smoked Gouda cheese
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 can (13.5 oz) coconut milk
- 1 tablespoon agar-agar powder
- Salt and pepper to taste
Instructions
- Prepare your ingredients by washing and chopping the broccoli into small florets. Dice the onion and mince the garlic.
- In a large pot over medium heat, add a splash of olive oil. Sauté the chopped onion until translucent (about 5 minutes), then add the minced garlic and cook for another minute.
- Stir in the broccoli florets and pour in the vegetable broth. Bring to a gentle boil, then reduce heat and let simmer for about 10 minutes until the broccoli is tender.
- Blend the mixture until smooth using an immersion blender or regular blender (leave some chunks if desired).
- Return to low heat, add coconut milk and shredded smoked Gouda cheese, stirring until melted.
- Sprinkle in agar-agar powder while stirring continuously; let simmer for another 5 minutes to thicken. Adjust seasoning with salt and pepper.
