- 200g dark chocolate (70% cocoa)
- 1 cup heavy cream (240ml)
- 3 tbsp granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Melt the dark chocolate in a heatproof bowl over simmering water until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Whisk together sugar and egg yolks until pale, then stir in vanilla extract and melted chocolate.
- Gently fold one-third of the whipped cream into the chocolate mixture, followed by the remaining cream until just combined.
- Beat egg whites until soft peaks form and carefully fold them into the mousse mixture.
- Spoon into serving cups and chill in the refrigerator for at least two hours before serving.
