- 3 boneless, skinless chicken breasts (about 1 lb)
- 6 cups romaine lettuce (chopped)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (sliced)
- 1 ripe avocado (sliced)
- 3 hard-boiled eggs (sliced)
- ½ cup blue cheese crumbles
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- Salt and pepper to taste
Instructions
- 1. Preheat grill or oven to medium-high heat. Season chicken with salt and pepper and cook until internal temperature reaches 165°F (75°C). Let rest.
- 2. In a large bowl, toss chopped romaine with olive oil and lemon juice.
- 3. Slice cherry tomatoes in half and cucumber into rounds.
- 4. Cut the grilled chicken into bite-sized pieces.
- 5. Layer sliced chicken, avocado, hard-boiled eggs, blue cheese, cherry tomatoes, and cucumber on top of the greens.
- 6. Toss gently before serving; enjoy your colorful Cobb Salad!
