Instructions
- Preheat your oven to 400°F (200°C).
- Spray a baking dish with nonstick cooking spray.
- Place the cod fillets in the dish, drizzle with olive oil, and season with salt and pepper.
- In a bowl, mix garlic, cherry tomatoes, herbs, and lemon juice; pour over the cod.
- Bake for 15-20 minutes until the fish flakes easily with a fork.
- Serve warm, drizzling any remaining juices over the top.
