Instructions

  1. Wash and peel the carrots, then julienne them using a peeler or box grater.
  2. Finely chop the green onions, separating the whites from the greens.
  3. Grate fresh ginger.
  4. Toast the sesame seeds in a dry skillet over medium heat until golden brown.
  5. In a large bowl, combine carrots, both parts of the green onions, grated ginger, and toasted sesame seeds.
  6. In a small bowl, whisk together soy sauce, sesame oil, and lemon juice. Pour over the carrot mixture and toss to coat evenly.
