Ingredients
- 1 pound ground chicken
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs or almond flour
- 1/4 cup finely chopped parsley
- 3 garlic cloves, minced
- 1 egg, beaten
- 1 tsp dried oregano
- Salt and black pepper to taste
- 1/4 cup milk
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a mixing bowl, combine ground chicken, Parmesan cheese, breadcrumbs (or almond flour), parsley, garlic, beaten egg, oregano, salt, and black pepper.
- Pour in the milk and mix gently until just combined.
- Shape the mixture into four mini meatloaves and place on a greased baking sheet.
- Drizzle olive oil over each meatloaf and bake for 25–30 minutes until internal temperature reaches 165°F.
- Optionally add shredded mozzarella during the last five minutes of baking.
