Instructions
- In a large bowl, whisk together lemon peel, lemon juice, olive oil, minced garlic, salt, and pepper.
- Add chicken pieces to the marinade and coat thoroughly. Cover and refrigerate for at least 30 minutes.
- Thread marinated chicken pieces and grape tomatoes onto metal skewers.
- Preheat grill to medium heat and grill skewers for 4-6 minutes on each side until cooked through.
- Remove from grill, garnish with parsley, and serve immediately.
