- 3 cups penne pasta (dry)
- 2 Tbsp olive oil
- 4 large garlic cloves (minced)
- 2 cups broccoli florets
- 3 cups baby spinach
- 2 cups cottage cheese (2%MF)
- 2 cups marinara sauce
- 1 cup shredded mozzarella
- Salt and pepper (to taste)
- Fresh basil (for garnish)
Instructions
- Preheat the oven to 400°F (200°C) and bring a large pot of salted water to boil.
- Cook the penne pasta until al dente according to package instructions. Drain.
- In a skillet, heat olive oil over medium-high heat. Sauté garlic and broccoli for about 7 minutes, then add baby spinach until wilted. Remove from heat.
- In a baking dish, combine cooked pasta with sautéed vegetables, cottage cheese, marinara sauce, salt, and pepper. Mix well.
- Top with shredded mozzarella and bake for about 20 minutes or until the cheese is golden and bubbly.
- Garnish with chopped fresh basil before serving.
