  • ⅔ cup natural cocoa powder
  • 1 ⅔ cups sugar
  • 2 eggs + 1 egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • 1 ⅓ cups all-purpose flour
  • ¾ cup butter (softened)
  • 3 cups powdered sugar
  • 6 tablespoons heavy cream

Instructions

  1. Preheat your oven to 350F (177C) and line a cookie sheet with parchment paper.
  2. In a microwave-safe bowl, melt butter in increments, then stir in cocoa powder until well combined.
  3. Mix in sugar, eggs, vanilla extract, and water until smooth.
  4. In a separate bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt; gradually add to the wet mixture.
  5. Scoop dough onto the prepared cookie sheet and bake for 10–12 minutes. Allow to cool completely.
  6. For frosting: Cream softened butter and mix in powdered sugar and cocoa powder alternately with heavy cream until smooth.
  7. Assemble cookies by spreading frosting between pairs and drizzle melted chocolate on top.
