Instructions
- Preheat oven to 425°F (220°C) and prepare a roasting pan.
- In a bowl, whisk together Dijon mustard, minced garlic, olive oil, thyme, salt, and pepper until well combined.
- Generously coat the chicken with the mustard mixture.
- Pour chicken broth into the roasting pan and place the coated chicken inside.
- Roast for approximately 1 hour and 15 minutes or until the skin is golden brown and internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before carving and serving.
