Rich, sweet, and irresistibly gooey, this Biscoff Gooey Butter Cake is a cookie-lover’s dream come true! Made with crushed Biscoff cookies and topped with a melt-in-your-mouth buttery layer, this dessert is soft, chewy, and packed with warm spiced flavor. Perfect for holidays, potlucks, or whenever you crave indulgence.

  • Total Time: 1 hour

Ingredients

Scale
  • Base Layer:
  • 1½ cups Biscoff cookie crumbs (finely crushed)
  • ½ cup unsalted butter, room temperature
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 cup all-purpose flour (sifted)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Gooey Topping:
  • 1 package (8 oz) cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  • Preheat Oven:
Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan.
  • Make the Base:
In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing well. Stir in the flour, baking powder, and Biscoff cookie crumbs until a dough forms. Press evenly into the prepared pan.
  • Prepare the Gooey Layer:
In another bowl, beat the softened cream cheese until smooth. Add eggs and vanilla, mixing until fully combined. Gradually mix in the powdered sugar until creamy and pourable.
  • Assemble:
Pour the cream cheese mixture over the Biscoff base layer and spread evenly.
  • Bake:
Bake for 35–40 minutes, or until the edges are golden and the center is just set but still slightly jiggly for that gooey texture.
  • Cool & Serve:
Let cool completely in the pan before slicing. Dust with extra powdered sugar if desired.
