- 2 lbs Yukon Gold potatoes, peeled and chopped
- 1/2 cup unsalted butter (1 stick)
- 6 cloves fresh garlic, roasted
- 1/2 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Boil the chopped Yukon Gold potatoes in salted water until fork-tender, about 15-20 minutes. Drain well.
- In a separate saucepan, melt the unsalted butter over medium heat until golden brown; remove from heat.
- Roast garlic cloves in foil drizzled with olive oil at 400°F (200°C) for 20-25 minutes until soft.
- Return drained potatoes to the pot; add brown butter, heavy cream, roasted garlic cloves, salt, and pepper. Mash until smooth and creamy.
- Adjust seasoning to taste and serve warm.
