Instructions
- Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter; press into a springform pan. Bake for 10 minutes until golden brown; let cool.
- In a mixing bowl, beat softened cream cheese and sugar until smooth. Add fresh raspberries and lemon juice; blend until well combined.
- Dissolve agar-agar in water according to package instructions in a saucepan. Incorporate this mixture into the cream cheese batter.
- Pour the filling over the cooled crust; smooth the top with a spatula. Refrigerate for at least 4 hours or overnight.
- Garnish with reserved fresh raspberries before serving.
