  • 9 no-boil lasagna noodles
  • 1 lb large shrimp, peeled and deveined
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded part-skim mozzarella cheese
  • ¾ cup freshly grated Parmesan cheese
  • 2 cups white sauce (made from 3 tbsp butter, 3 tbsp flour, 2 cups milk)
  • 2 cups fresh spinach (or 1 cup frozen, thawed)
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a medium saucepan over medium heat, melt butter. Whisk in flour until smooth. Gradually add milk while stirring until thickened; season with salt, pepper, and nutmeg.
  3. Sauté fresh spinach in olive oil until wilted or squeeze excess moisture from thawed frozen spinach.
  4. Layer the bottom of the baking dish with a thin layer of white sauce. Add layers of lasagna noodles, shrimp (cooked or raw), spinach, dollops of ricotta, mozzarella, and more white sauce. Repeat until all ingredients are used.
  5. Finish with remaining noodles topped with white sauce, mozzarella, and Parmesan cheese.
  6. Cover with foil and bake for 30 minutes. Remove foil during the last 10 minutes to brown the top.
  7. Allow to cool slightly before serving.
