- 9 no-boil lasagna noodles
- 1 lb large shrimp, peeled and deveined
- 15 oz whole milk ricotta cheese
- 2 cups shredded part-skim mozzarella cheese
- ¾ cup freshly grated Parmesan cheese
- 2 cups white sauce (made from 3 tbsp butter, 3 tbsp flour, 2 cups milk)
- 2 cups fresh spinach (or 1 cup frozen, thawed)
- 2 cloves garlic, minced
Instructions
- Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- In a medium saucepan over medium heat, melt butter. Whisk in flour until smooth. Gradually add milk while stirring until thickened; season with salt, pepper, and nutmeg.
- Sauté fresh spinach in olive oil until wilted or squeeze excess moisture from thawed frozen spinach.
- Layer the bottom of the baking dish with a thin layer of white sauce. Add layers of lasagna noodles, shrimp (cooked or raw), spinach, dollops of ricotta, mozzarella, and more white sauce. Repeat until all ingredients are used.
- Finish with remaining noodles topped with white sauce, mozzarella, and Parmesan cheese.
- Cover with foil and bake for 30 minutes. Remove foil during the last 10 minutes to brown the top.
- Allow to cool slightly before serving.
