- 1 ½ cups crushed graham crackers
- ½ cup unsalted butter, melted
- 16 oz full-fat cream cheese, softened
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 1 cup heavy whipping cream
- ½ cup butterscotch sauce (store-bought or homemade)
- 1 tsp agar-agar powder mixed with 2 tbsp water
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix crushed graham crackers and melted butter. Press into the bottom of a springform pan and bake for 10 minutes until golden brown. Allow cooling.
- In a large bowl, beat softened cream cheese until smooth. Gradually add brown sugar and granulated sugar, mixing until fluffy.
- In another bowl, whip heavy cream until soft peaks form; gently fold into the cream cheese mixture.
- Stir in half of the butterscotch sauce to create swirls.
- Dissolve agar-agar powder in water over low heat; allow it to cool slightly before incorporating into the cheesecake batter.
- Pour batter over cooled crust, drizzle remaining butterscotch sauce on top, and refrigerate for at least four hours or overnight before serving.
