  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 cup heavy whipping cream
  • ½ cup butterscotch sauce (store-bought or homemade)
  • 1 tsp agar-agar powder mixed with 2 tbsp water

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix crushed graham crackers and melted butter. Press into the bottom of a springform pan and bake for 10 minutes until golden brown. Allow cooling.
  2. In a large bowl, beat softened cream cheese until smooth. Gradually add brown sugar and granulated sugar, mixing until fluffy.
  3. In another bowl, whip heavy cream until soft peaks form; gently fold into the cream cheese mixture.
  4. Stir in half of the butterscotch sauce to create swirls.
  5. Dissolve agar-agar powder in water over low heat; allow it to cool slightly before incorporating into the cheesecake batter.
  6. Pour batter over cooled crust, drizzle remaining butterscotch sauce on top, and refrigerate for at least four hours or overnight before serving.
