Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round baking pans.
- In a large bowl, whisk together flour, sugars, baking powder, cinnamon, and a pinch of salt.
- In another bowl, beat eggs and vegetable oil until smooth. Gradually add to dry ingredients while stirring gently.
- Fold in grated carrots and nuts if using.
- Divide batter between prepared pans and bake for 25-30 minutes or until golden brown.
- Cool in pans for 10 minutes before transferring to wire racks. Frost with cream cheese frosting or enjoy plain.
