- 1 cup graham cracker crumbs
- 4 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lime juice
- 1 cup fresh blackberries
Instructions
- Preheat oven to 325°F (160°C) and line a muffin tin with paper liners.
- In a bowl, combine graham cracker crumbs and melted butter. Press about 1 tbsp into each liner for the crust.
- In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in lime juice.
- Gently fold in blackberries. Spoon filling over crusts in each liner.
- Bake for 20-25 minutes until set but slightly jiggly in the center. Cool completely before refrigerating for at least two hours.
