- 4 cups frozen shredded hashbrowns
- 3–4 boneless skinless chicken breasts (about 1.5 lbs)
- 2 cups shredded sharp cheddar cheese
- 3 cloves fresh garlic, minced
- 1 cup low-sodium chicken broth
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Grease a large baking dish with nonstick spray.
- Season the chicken breasts with salt and pepper. Cook in chicken broth over medium heat for 12-15 minutes until fully cooked.
- Shred the cooked chicken using two forks.
- In a large bowl, mix shredded chicken with hashbrowns, minced garlic, onion powder, and half of the cheddar cheese until well combined.
- Spread the mixture evenly in the prepared baking dish and top with remaining cheese.
- Bake for 30-35 minutes until golden brown and bubbly. Let rest for 5 minutes before serving.
