- 1 lb ground chicken sausage
- 1 cup ditalini pasta
- 2 cups fresh spinach
- 1 cup freshly grated Parmesan cheese
- 4 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
Instructions
- In a large pot over medium heat, add olive oil and sauté chopped onions until translucent (about 5 minutes). Add minced garlic and cook for another minute.
- Add ground chicken sausage to the pot; break it apart and brown for about 5-7 minutes.
- Pour in chicken broth and bring to a gentle boil. Add ditalini pasta and cook according to package instructions (about 8 minutes), stirring occasionally.
- Reduce heat and stir in heavy cream and fresh spinach; let spinach wilt for a couple of minutes.
- Mix in grated Parmesan cheese until melted and well-combined. Season with salt and pepper to taste before serving.
