- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup freshly grated Parmesan cheese
- 1 cup seasoned breadcrumbs
- 2 large eggs
- 3 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 2 tsp Dijon mustard
- Salt and pepper to taste
- Nonstick cooking spray
Instructions
- Preheat the oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Season the chicken breasts with salt and pepper on both sides.
- In one bowl, mix the Parmesan cheese and breadcrumbs; in another bowl, whisk the eggs until frothy.
- Dip each chicken breast in the egg wash, then coat with the breadcrumb mixture.
- Place the coated chicken in the baking dish and bake for 25-30 minutes, until golden brown and cooked through (internal temperature of 165°F).
- While the chicken bakes, melt butter or olive oil in a skillet over medium heat and sauté minced garlic until fragrant.
- Add heavy cream, chicken broth, and Dijon mustard to the skillet; simmer for about five minutes until thickened. Season as desired.
- Serve the crispy chicken drizzled with garlic cream sauce.
