- 4 boneless, skinless chicken breasts
- 1 medium onion, diced
- 1 cup fresh mushrooms, sliced
- 3 cloves garlic, minced
- 2 tbsp taco seasoning
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- 1 cup low-sodium chicken broth
Instructions
- Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Season chicken breasts with salt, pepper, and taco seasoning for even coverage.
- In a skillet over medium heat, melt butter and sauté onions and mushrooms until soft (about 5 minutes).
- Add minced garlic and cook for another minute. Stir in heavy cream and chicken broth; simmer while adding shredded cheddar until melted.
- Place seasoned chicken in the baking dish, pour the sauce over it, covering completely.
- Bake for 25-30 minutes or until internal temperature reaches 165°F (74°C). Serve drizzled with sauce.
