- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup fresh basil leaves
- 4 garlic cloves, minced
- 4 tbsp extra virgin olive oil
- 1 tsp sea salt
- ½ tsp freshly cracked black pepper
- 1 cup panko breadcrumbs
- Zest of 1 lemon
Instructions
- Preheat the oven to 375°F (190°C).
- In a food processor, blend basil leaves, garlic, olive oil, salt, and pepper until finely chopped.
- Pound chicken breasts to about half an inch thick and rub the basil mixture evenly over each piece.
- On a plate, mix panko breadcrumbs with lemon zest. Firmly press each chicken breast into the breadcrumb mixture until fully coated.
- Place breaded cutlets on a parchment-lined baking sheet and bake for 25-30 minutes or until golden brown and cooked through.
- Serve immediately with your favorite sides.
