Instructions
- Preheat your oven to 350°F (175°C) and grease two round baking pans.
- In a large bowl, whisk together flour, baking powder, and casting sugar until combined.
- In another bowl, mix melted coconut oil, key lime juice, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients and stir until just combined.
- Pour the batter into prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- For frosting, prepare agar-agar according to package instructions. Whip chilled coconut cream with remaining key lime juice and casting sugar until fluffy; fold in agar-agar mixture.
- Once cooled, frost the cake layers generously with the frosting.
