- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 cup sugar
- 1 cup whole milk (or almond milk)
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/4 cup honey
- 2 cups powdered sugar
Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch round baking pans.
- In a large bowl, whisk together cornmeal, flour, baking powder, and sugar.
- In another bowl, combine milk, melted butter, and eggs until smooth. Gradually mix into dry ingredients until just combined.
- Divide batter evenly between prepared pans and bake for 25-30 minutes or until golden brown and a toothpick inserted comes out clean.
- While cooling, whip together softened butter, honey, and powdered sugar until fluffy.
- Once cooled completely, layer the cakes with frosting in between and cover the top and sides generously.
