Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2 minutes).
- Mix in the lemon zest and juice until well combined.
- Gradually add flour and salt, mixing until just combined.
- Scoop tablespoon-sized portions of dough onto prepared baking sheets, spacing them 2 inches apart.
- Bake for 12-15 minutes or until lightly golden around the edges.
- Allow to cool on wire racks before dusting with powdered sugar.
