Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
- Add the vanilla extract and gradually incorporate the flour until just combined.
- In a saucepan, heat raspberries with agar-agar powder and just enough water to cover them until they form a sauce-like consistency; let cool.
- Divide the cookie dough into two portions; roll out the larger portion into a rectangle on parchment paper.
- Spread the raspberry mixture over the dough, crumble the smaller piece of dough on top, and swirl gently with a toothpick.
- Cut into squares or desired shapes and bake for 12-15 minutes until lightly golden.
