- 1 lb sea scallops
- 2 tbsp olive oil
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 3 cloves fresh garlic, minced
- 1/2 cup low-sodium chicken broth
- 2 tbsp lemon juice
- 2 tbsp chopped parsley (for garnish)
Instructions
- 1. Pat the scallops dry and season lightly with salt and pepper.
- 2. In a skillet, heat olive oil over medium-high heat until shimmering. Add scallops without overcrowding and sear for about 2 minutes on each side until golden brown. Remove and keep warm.
- 3. Reduce heat to medium-low; add minced garlic to the skillet and sauté until fragrant (about 30 seconds).
- 4. Pour in chicken broth, scraping any bits from the pan, then stir in heavy cream and Cajun seasoning. Simmer for about 3 minutes until slightly thickened.
- 5. Add lemon juice, return scallops to the skillet, and let them soak in the sauce for an additional minute.
- 6. Serve hot, garnished with chopped parsley.
