- 4 cups powdered sugar (sifted)
- 2 tbsp milk or plant-based milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking sheet.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt until well combined.
- In another bowl, beat the eggs, vegetable oil, and vanilla until frothy.
- Fold the grated carrots into the wet mixture and combine with the dry ingredients until just mixed.
- Pour batter into the prepared baking sheet and bake for 25-30 minutes or until a toothpick comes out clean.
- For frosting: Beat softened cream cheese and butter until smooth; gradually add powdered sugar and milk to reach desired consistency.
- Once cooled, frost the cake generously and enjoy!
