- 1 lb boneless skinless chicken thighs
- 2 tbsp fresh ginger, grated
- 1/4 cup honey
- 4 garlic cloves, minced
- 1/4 cup low-sodium soy sauce
- 2 tbsp apple cider vinegar
Instructions
- 1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- 2. In a large bowl, combine soy sauce, apple cider vinegar, honey, garlic, and ginger. Add chicken thighs and marinate for at least 15 minutes.
- 3. Arrange marinated chicken in the baking dish with space between each piece.
- 4. Bake for 25-30 minutes until golden brown and internal temperature reaches 165°F (75°C).
- 5. Brush additional marinade over chicken during the last five minutes of baking.
- 6. Serve hot with rice or vegetables.
