- 35 vanilla wafer cookies (1 ½ cups), plus extra for topping
- 5 tablespoons unsalted butter (melted)
- 8 ounces cream cheese (softened)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 containers whipped topping (8 ounces each, thawed)
- 1–2 pounds fresh berries (strawberries, blueberries, or your favorites)
Instructions
- Crush vanilla wafers in a resealable bag using a rolling pin until fine crumbs form.
- In a mixing bowl, combine crushed cookies with melted butter and press into an 8-inch square pan to form the crust.
- In another bowl, mix softened cream cheese, powdered sugar, and vanilla extract until smooth. Fold in one container of whipped topping.
- Wash and slice fresh berries as desired.
- Layer half of the cheesecake mixture over the crust, followed by half of the berries; repeat with remaining layers.
- Spread remaining whipped topping on top and sprinkle with crushed cookies if desired.
- Chill for at least one hour before serving.
