  2. Spread 1½ cups of the thickened pudding into the crust and set aside the rest.
  3. Beat softened cream cheese and sugar together until smooth in another bowl. Gently fold in Cool Whip.
  4. Mix half of this cream cheese mixture with the remaining pudding and layer it into the crust.
  5. Top with leftover Cool Whip/cream cheese mixture and refrigerate for at least 8 hours or overnight.
  6. Before serving, garnish with chopped pistachios.
