- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 can (20 oz) pineapple chunks, drained
- 1/4 cup caramel sauce
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of each muffin cup to form the crust.
- In another bowl, beat together softened cream cheese and sugar until smooth. Add eggs one at a time, followed by vanilla extract, mixing until well combined.
- Pour the cheesecake filling into each muffin cup, filling them about three-quarters full. Top with pineapple chunks.
- Bake for 20-25 minutes until set in the center. Allow to cool completely before drizzling with caramel sauce.
