  • 1/4 cup melted butter
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 can (20 oz) pineapple chunks, drained
  • 1/4 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of each muffin cup to form the crust.
  3. In another bowl, beat together softened cream cheese and sugar until smooth. Add eggs one at a time, followed by vanilla extract, mixing until well combined.
  4. Pour the cheesecake filling into each muffin cup, filling them about three-quarters full. Top with pineapple chunks.
  5. Bake for 20-25 minutes until set in the center. Allow to cool completely before drizzling with caramel sauce.
