Instructions
- Preheat the oven to 425°F (220°C).
- Chop bell peppers, zucchini, and carrots into bite-sized pieces.
- In a mixing bowl, toss the chopped veggies with olive oil, salt, and pepper until well-coated.
- Spread the seasoned vegetables evenly on a baking sheet lined with parchment paper. Roast for 20-25 minutes until tender and slightly charred.
- Once roasted, scoop hummus into bowls, top with the warm veggies, and sprinkle fresh herbs.
