  • 2 (8-ounce) packages cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 3/4 cup white chocolate melts
  • 1 (8-ounce) container Cool Whip, thawed & divided
  • 1 cup diced strawberries
  • 1 cup blueberries
  • 7 whole strawberries for decoration
  • Red and blue sprinkles

Instructions

  1. Crush oatmeal cookies into fine crumbs and layer them at the bottom of seven (5-ounce) cups.
  2. In a mixing bowl, beat together cream cheese, powdered sugar, and vanilla until smooth.
  3. Melt white chocolate melts; dip whole strawberries in chocolate and place on a wax paper-lined tray.
  4. Mix remaining melted chocolate with the cream cheese mixture until combined.
  5. Gently fold in 1½ cups of Cool Whip into the cream cheese mixture; transfer it to a piping bag.
  6. Layer your parfaits by piping cheesecake over the cookie base, adding berries, and repeating the layers.
  7. Top each parfait with remaining Cool Whip and finish with a chocolate-covered strawberry.
