Instructions
- Preheat oven to 400°F (200°C).
- In a mixing bowl, combine roasted red pepper, chopped spinach, mozzarella cheese, Parmesan cheese, breadcrumbs, beaten egg, salt, and black pepper.
- Make a pocket in each chicken breast and stuff with the filling mixture; secure openings with toothpicks.
- Place stuffed chicken on a parchment-lined baking sheet and roast for 25-30 minutes or until cooked through.
- Let rest before serving; garnish with fresh parsley if desired.
