- 1 lb boneless, skinless chicken thighs
- 3 cloves fresh garlic, minced
- 1/4 cup extra virgin olive oil
- 1/4 cup freshly squeezed lemon juice
- 2 tsp paprika (sweet or smoked)
- 1 tbsp dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, mix olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper. Add chicken thighs and coat well. Cover and marinate in the refrigerator for at least one hour or overnight.
- Preheat grill to medium-high heat (or oven to 400°F / 200°C).
- Cook chicken on the grill for about 6 minutes per side until it reaches an internal temperature of 165°F (74°C). For baking or pan-searing, cook each side for about 5 minutes until golden brown.
- Let the chicken rest for 5 minutes before slicing.
- Serve on a colorful platter with fresh greens or roasted vegetables.
