- 1 lb raw shrimp (peeled and deveined)
- 1 cup uncooked orzo pasta
- 2 cups chicken stock
- 5 cloves garlic (minced)
- ¼ cup sun-dried tomatoes (chopped)
- 14 oz artichoke hearts (drained and chopped)
- 4 oz fresh spinach
- 1 cup heavy cream
- Olive oil
- Smoked paprika
- Italian seasoning
- Salt
- Pepper
Instructions
- Season the shrimp with smoked paprika, Italian seasoning, salt, and pepper. Sear in olive oil over medium-high heat until pink. Remove from the skillet.
- In the same skillet, sauté sun-dried tomatoes and uncooked orzo in olive oil until slightly browned. Add chicken stock and simmer until orzo is cooked.
- Stir in spinach, artichokes, and heavy cream until well combined. Return shrimp to the skillet and heat through.
- Adjust seasoning as needed before serving warm.
