- 22 Golden Oreos (or vanilla sandwich cookies)
- 1/4 cup unsalted butter (melted)
- 2 pints strawberry ice cream
- 3/4 cup unsalted butter (softened)
- 2–3 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup freeze-dried strawberries
Instructions
- Line an 8×8 inch pan with parchment paper.
- Crush cookies and mix with melted butter; press into the bottom of the pan to form the crust.
- Soften strawberry ice cream briefly at room temperature; spread over the crust.
- Beat softened butter and powdered sugar until fluffy; add vanilla and milk to achieve desired consistency.
- Frost the ice cream layer; freeze for at least 4 hours until firm.
- Crush remaining cookies with freeze-dried strawberries for topping; sprinkle over the frosted cake before serving.
