Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Blend freeze-dried strawberries into fine powder.
- In a mixing bowl, cream together butter, sugar, and vanilla.
- Beat in the egg until well combined.
- Gradually add flour, baking soda, reserved strawberry powder, and salt; mix until just combined.
- Fold in strawberry jam evenly throughout the dough.
- Roll dough into small balls and place on the prepared baking sheet.
- Bake for about 8 minutes; lightly tap cookies to flatten, then bake for an additional 2-3 minutes until edges are crisp but centers remain soft.
- While cooling, prepare icing by combining cream cheese, powdered sugar, hot milk, vanilla extract, and remaining strawberry powder until smooth.
- Once cooled, ice each cookie and allow icing to set before serving.
