Instructions
- In a food processor, pulse together flour, sugar, and salt. Add cold butter and pulse until crumbly. Drizzle in ice water, pulsing until the mixture holds together. Shape into a disk, wrap in plastic, and refrigerate for at least 1 hour.
- Preheat oven to 400°F. Roll out dough into a circle and transfer to a tart pan. Poke holes in the bottom, line with parchment paper, and add pie weights. Bake for 20 minutes or until golden brown; cool completely.
- In a bowl, beat cream cheese with sugar, lemon juice, and vanilla extract until smooth. Fold in whipped cream gently.
- Fill cooled tart shell with the cream cheese mixture; top with sliced strawberries and glaze with red currant jam mixed with water.
