Instructions

- Halve the spaghetti squash lengthwise, scoop out seeds, and drizzle with olive oil and sea salt.
- Place cut side down on a baking sheet and roast for 35-40 minutes until tender.
- In a skillet, heat olive oil, sauté garlic, add ground beef, salt, pepper, marinara sauce, and Italian seasoning; simmer.
- Combine ricotta, Parmesan, olive oil, and salt in a bowl.
- Fluff roasted squash strands with a fork; fill with beef mixture and dollops of ricotta mix. Top with mozzarella.
- Bake for an additional 15 minutes until the cheese is bubbly.
